Weekly What We Eat

Last week we celebrated Jon’s birthday! We kicked the celebrations off with a weekend hike and picnic with friends, followed by a whiskey tasting and dinner in Purcelville. On his actual birthday I whipped up a breakfast risotto and surprised the birthday boy with donuts from Sugar Shack. I made a few adjustments to the risotto based on what we had around the house and it turned out great! We left out the leeks and used ham instead of pancetta, but this would be a great breakfast with any combination of meat and veggie. Jon also got to use his new hand press espresso birthday gift to whip us up some killer espresso. #yum

For dinner we made crock pot steak carnitas with obligatory guacamole and capped the evening off with a snickerdoodle birthday cake.

Later in the week we enjoyed slow cooker leftovers and also received a delivery from Blue Apron. We made a Thai curry chicken soup and a vegetarian pot pie with biscuits. The short rib burgers are being saved until next week.

Over the weekend we celebrated again with Jon’s parents and re-made this pulled pork recipe with a simple slaw. The crock pot is the way to go for entertaining! Dessert was a dark chocolate cake with a nutella buttercream. This cake was amazing! It wasn’t too sweet, but was dark, chocolaty and moist and paired perfectly with the sweet nutella buttercream. And it was the biggest cake I have made. I need to get the leftovers out of the house!
