Weekly What We Eat

Last week was more big meals that provided lots of leftovers along with the pre-race eats, camping edition.

We made another delicious recipe from Iowa Girl Eats: creamy cheesy chicken and garlic bake. This is relatively simply and we’ll definitely make it again. It didn’t fit in an 8×8 pan for us and we upped the amounts of tomatoes and green onions, but other than that, followed the recipe as is.

We also thawed out a leftover flank steak that we used with this tasty, tangy marinade. Another simple recipe that will find itself utilized often as the weather allows us to grill more and more often.

There were some long, tired days last week which prompted me to seek out vodka. I’m no mixologist, but created a cocktail of my own that gets after recovery and drunkenness. The simple drink calls for fizzy water (soda stream!), tart cherry juice concentrate (our go-to), as much vodka as you need on that day and a squeeze or two of lime juice.

We camped outside of Charlottesville for my first race of the season. In order to eat our typical pre race meal of pasta with Trader Joe’s turkey meatballs and marinara sauce we cooked everything ahead of time so that we would only need to heat the meal up over the fire. The meal was accompanied by some delicious garlic bread and I was nice and carbo-loaded for race number one of 2015! Race report to follow. Get pumped!
