What We Eat – We’re Back!

Hi! Life has been crazy, but we’re still here. Over the last few weeks there have been a handful of races for both of us plus our first multi-day backpacking trip. Posts to come on all!

In the meantime we’ve had some delicious Blue Apron meals, whipped up some easy meals on our own and sought out restaurants with cheap, but healthy eats.

We made a strawberry-chicken salad from one of our favorite cookbooks – The Feed Zone Cookbook. So many awesome recipes in there!

We tried out TaKorean, a Korean taco place, that was awesome! I wish we had one closer to home.

Our garden started hooking us up so we made our first batch of tasty, roasted zucchini fries.

And our cucumber plant is going nuts so I’ve been trying to find ways to use those up. Cue this hydrating water.
